BBQ Chicken Burritos

A little over a week ago I made a delish dish called BBQ chicken burritos.  Not only were they DELICIOUS, but they were QUICK and EASY. I got this recipe from eatingwell.com, which you can tell just from the website name that it is HEALTHY!!  Woo, delicious, quick, easy and healthy, what is better then that??  Not much my friends, not much.

Ingredients:
  • 1 2-pound roasted chicken, skin discarded, meat removed from bones and shredded (4 cups).  I actually used 3 chicken breasts and boiled them then shredded them, both work just fine.

  • 1/2 cup prepared barbecue sauce

  • 1 cup canned black beans, rinsed

  • 1/2 cup frozen corn, thawed, or canned corn, drained

  • 1/4 cup reduced-fat sour cream

  • 4 10-inch whole-wheat tortillas

  • 1 lime, cut in wedges


  • Instructions:
    1. Place a large nonstick skillet over medium-high heat. Add chicken, barbecue sauce, beans, corn and sour cream; stir to combine. Cook until hot, 4 to 5 minutes
    1. Top the tortilla with one-fourth of the chicken mixture; roll as you would a burrito. I highly reccomend squeezing your lime inside of your burrito, it really adds some flavor.
    Another thing that you can do is get romane lettuce and line your tortilla before adding the rest of the toppings.  Adding a little lettuce is always good!  You can also add other things to this simple recipe as well like tomatoes, rice, you name it.  We liked the recipe just the way it was.
